As pioneers in organic tropical fruit cultivation, we know how important it is not only to grow high-quality mangoes but also to know how to store them properly to keep all their organoleptic and nutritional properties intact. In this article, we will guide you through the best methods for storing mangoes, both fresh and ripe, to guarantee you maximum taste and freshness.

1. How to Recognize a Ripe Mango

Before discussing storage, it's essential to know how to recognize a ripe mango. A mango is ready to eat when:

  • The skin turns yellow, orange, or reddish (depending on the variety).
  • The texture is slightly yielding to the touch, but not too soft.
  • It emits a sweet, fruity aroma, particularly intense near the stem.

An unripe mango, on the other hand, will be harder to the touch and predominantly green in color.

2. Storing Unripe Mangoes

If you have purchased or picked unripe mangoes, here's how to store them:

  • At room temperature: Unripe mangoes are best stored at room temperature, away from direct sunlight. You can let them ripen on a countertop, checking them daily.
    To speed up the ripening process, you can place them in a paper bag with an apple or banana. These fruits release ethylene, a natural gas that promotes ripening. Watch out for insects!
    Ripening time: At room temperature, an unripe mango usually ripens within 3-7 days, depending on its initial stage of ripeness.

3. Storing Ripe Mangoes

Once the mango is ripe, it's important to store it correctly to prevent it from spoiling:

  • In the refrigerator: A ripe mango can be stored in the refrigerator, where the low temperature slows down the ripening process. In the refrigerator, mangoes stay fresh for about 5-7 days. It's advisable to wrap them in paper towels or place them in a perforated plastic bag to minimize moisture loss.
  • Cut and ready to eat: If you have already cut the mango, cover it with cling film or place it in an airtight container and refrigerate it. This way, it will stay fresh for 2-3 days.

4. Freezing Mangoes

If you have a large quantity of ripe mangoes and want to store them for a longer period, freezing is an excellent option:

  • Preparation: Peel and cut the mango into pieces or slices. You can also blend it to make a puree.
  • Freezing method: Arrange the mango pieces on a tray so they don't touch and place them in the freezer for about 2-3 hours. Once frozen, transfer them to freezer bags or airtight containers. In the freezer, mangoes can be stored for about 6-12 months.
  • Using frozen mango: Frozen mango is perfect for making smoothies, ice cream, or for use in dessert recipes.

5. Storing Dried Mango

Another long-term storage method is drying:

  • Preparation: Peel the mango and slice it thinly.
  • Drying: Use a fruit dehydrator, set at a temperature of about 50-60°C, or you can sun-dry them (if you have a warm and dry climate). Drying can take several hours, depending on the thickness of the slices and the method used.
  • Storage: Store dried mango in airtight containers or plastic bags in a cool, dry place. It will keep for several months.
