Avocado is the undisputed star of modern bowls: a superfood rich in good fats (omega-3) and fiber, perfect for a balanced meal. In this guide, we'll see how to prepare a perfect Salmon and Avocado Poke Bowl, ideal for those looking for a light but energetic lunch.
Ingredients (for 2 people)
-
1 ripe Avocado (discover how to choose the perfect Avocado in our store)
-
100-120 g Basmati Rice (excellent for its controlled glycemic index)
-
200 g Smoked Salmon fillet
-
100 g Boiled Edamame (soybeans)
-
6 fresh Radishes
-
1 large Carrot
-
1 Lime (juice and zest)
-
Black sesame seeds to taste
-
Soy sauce (low-sodium recommended)
Step-by-Step Preparation
1. Cooking the base: Rice and Edamame
Start by bringing a large pot of salted water to a boil. Cook the edamame according to the package instructions, drain them with a slotted spoon, and then cook the basmati rice in the same water. Once cooked, drain the rice and season it with a drizzle of EVO oil and grated lime zest for a touch of citrus freshness. Let it cool.
2. Preparing the vegetables and salmon
While the rice rests, dedicate yourself to the topping. Cut the salmon fillet into cubes or regular slices. Wash the carrots and, after peeling them, create thin ribbons with a vegetable peeler: this will increase the crunchiness of your bowl. Thinly slice the radishes for a spicy and decorative touch.
3. The perfect avocado cut
Cut the avocado in half, remove the pit, and gently peel it. For a restaurant-like effect, cut it into thin slices and immediately spray them with lime juice. This trick prevents oxidation (browning) and maintains the bright green color typical of our fruits.
4. Assembling the Bowl
Spread the rice at the bottom of two large bowls. Arrange the ingredients in a radial pattern, separating them by color: salmon, edamame, carrots, radishes, and finally, the avocado fan. Garnish with black sesame seeds and a drizzle of soy sauce.
💡 Chef's Tip (Variations)
-
Vegetarian Version: Replace salmon with cubes of feta or marinated tofu.
-
Extra Protein: For a post-workout meal, add a hard-boiled egg or grilled chicken along with the feta.
