
Spring is the season of "new beginnings", the first true season of the year. There is a growing desire for lightness and purification. This is why we want to suggest many recipes with avocado, the fruit that distinguishes us, so tasty and nutritious at any time of the year.
You will find easy preparations and others for those who already know their way around the kitchen, but the result will always be a healthy and fun mix, naturally featuring avocado.
You can choose the recipes that most intrigue you, from appetisers to desserts. We particularly liked the Vietnamese spring rolls and the lemon ravioli with avocado.

Appetiser
Vietnamese spring rolls with avocado and shrimp
For an aperitif with friends, these spring rolls will satisfy everyone, even the most demanding, thanks to an irresistible exotic touch.
Time: 20 minutes
Difficulty: medium
Ingredients for 4 people: 250 ml soy sauce, 1 teaspoon sesame seeds, ½ teaspoon sesame oil, 12 rice paper sheets, 2 peeled carrots, 20 basil leaves, 15 mint leaves, 125 grams peeled shrimp, 1 avocado sliced, 30g walnuts.
Combine the soy sauce with the sesame seeds and oil in a bowl and set aside. Gently dip the rice paper sheets in a bowl of warm water, place them on a flat surface. In the centre, place grated carrot, chopped basil and mint, and diced shrimp and avocado. Fold the two sides and roll the spring roll on itself and cut it in half. Repeat with each rice paper sheet.
First Course
Salmon and avocado ravioli
It takes a bit of kitchen skill to prepare these homemade ravioli, but the result is truly amazing.
Time: 1 hour and 15 minutes
Difficulty: difficult
Ingredients for 2 people:
For the filling: 300 grams avocado, 200 grams fresh salmon, 1 lemon, salt and pepper to taste, chives
For the dough: 200 grams 00 flour, 100 ml water and fine salt to taste
Start with the filling: cut the salmon into small pieces, discarding the skin and any bones, and divide the avocado in half, scooping out the pulp with a spoon. Chop everything, adding grated lemon zest, salt and pepper to taste, and chives. Put the mixture into a pastry bag (a plastic bag with a corner snipped off will also work).
Now, let's make the ravioli!
Knead the flour with water, adding a pinch of salt, until you get a soft and smooth dough. Form a ball and wrap it in plastic food wrap and put it in the fridge for at least 30 minutes. Once the dough has rested, roll it out on a wooden board to a very thin sheet.
Using a round pastry cutter, make circles and then fill the centre of each circle with some filling. Fold it into a half-moon shape, lightly moistening the edges. Cook in boiling water for about 4 minutes and season with an oriental sauce, such as teriyaki, and serve. The touch of class: chopped cashews sprinkled over the ravioli before serving.
Second Course
In addition to suggesting a recipe already featured on our blog, but truly appetising and original (Pink Eggs with Avocado Hummus), here is a main course dedicated to fish and avocado lovers.
Cod with avocado sauce
Time: 35 minutes
Difficulty: easy
Ingredients for 4 people: 400 grams cod (fresh or frozen, the important thing is that they are only fillets), 100 grams breadcrumbs, 5 sun-dried tomatoes, a handful of capers (be sure to rinse them of salt first), extra virgin olive oil, 1 ripe avocado, 1 lime, chopped parsley to taste, salt and pepper to taste, 150 grams Greek yogurt. If you like, you can add a little chilli to the recipe.
Take the mixer and pour in breadcrumbs, sun-dried tomatoes, capers, parsley, salt and pepper. In a well-oiled baking dish, place the cod fillets and cover them with the mixture. Add a drizzle of oil and bake at 200 degrees, in "grill" mode, for 10 minutes.
Meanwhile, blend together avocado, lime juice, yogurt, salt and pepper, chilli if you like, diced avocado (pulp only) to obtain a smooth and velvety cream. Remove the fillets from the oven and plate them, including the obtained cream.
Dessert
Avocado Ice Cream (with ice cream maker)
Time: 30 minutes
Difficulty: easy
Ingredients for 6/7 servings: 300 grams avocado pulp, 300 ml whole milk, 150 grams sugar, a pinch of carob flour and salt.
Place the avocado pulp in a bowl and add the milk, sugar, a pinch of salt, along with a pinch of carob flour. Blend everything vigorously until you get a thick sauce. Continue churning until you achieve the desired consistency (minimum 20 minutes).
