Avocado lends itself to being used in the preparation of fresh and light dishes, so here are some summer avocado recipes we've selected for you.

Avocado Appetizers

Guacamole

It's the most famous sauce made with avocado, soft, tasty, and velvety, and for a perfect pairing, you can serve it with nachos.

Many variations exist, but we offer you the original Mexican one: blend together one ripe avocado, the juice of one lemon, half a small onion, one medium-sized tomato, and a pinch of salt.

Avocado, Mozzarella, and Focaccia Skewers

On a wooden or bamboo skewer, place a mini mozzarella ball, a sun-dried tomato, two slices of avocado, and finally, a square of focaccia of your choice.

Serve them with a sauce made by blending 1 ripe avocado, the juice of 1 lemon, and, if you like, a few drops of Tabasco.

 

Avocado First Courses

Pearl Barley with Salmon and Avocado

Boil the pearl barley and, once cool, dress it with oil, fresh dill, diced marinated salmon, and avocado pieces (one whole avocado for 400g of barley).

It can be stored in the fridge like cold pasta and is very flavorful. You can also add some crumbled feta cheese.

Penne with Avocado Pesto

Blend one ripe avocado with a handful of toasted pine nuts, three or four basil leaves, the juice of one lemon, and a little extra virgin olive oil.

Drain the pasta and add it to the pesto, mixing until everything is combined (not on the heat, but in a cold bowl).

Avocado Main Courses

Tuna, Fennel, and Avocado Salad with Yogurt Sauce

Crunchiness and deliciousness for this super salad made with thinly sliced fennel, well-drained canned tuna, avocado slices, Taggiasca olives, salt, and pepper to taste.

Garnish the plate with toasted bread croutons. Serve with a turmeric and mint yogurt sauce.

To make the sauce: 1 plain Greek yogurt, half a teaspoon of turmeric, and three or four mint leaves.

Baked Egg on Avocado

While preheating the oven to 180 degrees Celsius, chop some fresh chives. Cut an avocado in half, remove the pit, and scoop out some of the flesh with a spoon to make room for the egg (don't go too deep, just a small space in the center of the fruit). Add salt, pepper, and a teaspoon of oil, then bake.

After 5 minutes, take out the avocados and pour the eggs into the center of the two halves (being careful not to break the yolk). Add the chives (chili pepper if you like) and bake for another 10 minutes.

 

Avocado Dessert: Super Quick

Vegan Avocado Mousse

Blend the avocado flesh with three tablespoons of coconut milk, two tablespoons of brown sugar, and one tablespoon of unsweetened cocoa powder.

Decorate with chopped pistachios and store in the fridge before serving.

 

Sushi and Poke Bowl with Avocado

The combination of avocado and salmon is very common in the preparation of nigiri and uramaki (rice rolls): if you're good at preparing sushi rice, this is also a fresh and delicious summer dish.

The current trend, poke, often includes avocado. You can create your own personalized poke, adding avocado pieces, which also pairs well with sesame, as well as salmon and shrimp.

Secret: add a crunchy note, even with crushed walnuts or pistachios.

  • It's a valid substitute for butter in dessert preparation
